Avocado "TLT" - Tempeh, Lettuce, Tomato Sandwich
1 pack tempeh (250 g), cut into 1/2 cm strips (typically serves 3)
2 tbsp pure maple syrup
1 tbsp tamari or soy sauce
1/2 tsp paprika
1 tsp liquid smoke
1 tbsp extra virgin olive oil
1 tsp extra virgin olive oil for frying
Few leafs lettuce
2 to 3 slices Tomato
Few Red onion slices
2 slices whole grain whole wheat bread
1/3 avocado, sliced or mashed
1 tsp sriracha or chipotle vegan mayonnaise (or regular mayo)
Whisk the marinade ingredients together in a glass dish or bowl. Marinate the tempeh strips in the marinade for at least 30 minutes.
Fry the tempeh strips in 1 tsp oil and pour the rest of the marinade in when they start to sizzle. The sugars from the maple syrup will caramelize and add to the flavour! Flip when one side has browned. The tempeh is done when the surfaces are browned (even blackened on the edges, depending on how you like your "bacon"). Serve four strips hot over whole wheat bread, stacked with lettuce, tomato, avocado slices, onions, mayo or other typical BLT toppings you enjoy, and the second piece of bread.
