Baked Sweet Potato Cubes

INGREDIENTS

1 large sweet potato, cubed

1/2 tsp olive oil

1/2 tbsp arrowroot powder

Spice options:

Fresh or dried rosemary + lemon juice

Cayenne pepper + smoked paprika

Fresh or dried dill + lime juice

Plain cracked pepper + salt

Dip options:

Best Guacamole

Best Authentic Hummus

Vegan Garlic Aioli

Lebneh Yogurt Dip

Cashew Cheeze

INSTRUCTIONS

Preheat the oven to 400 F. Toss the sweet potatoes lightly with olive oil. Put the sweet potato cubes in a large plastic bag with the arrowroot powder and shake until all the potatoes are covered. Empty onto a baking sheet lined with parchment or a Silpat. Bake for 30 minutes. Season as desired, and serve plain or with a dip listed above.
