Summer Berry Breakfast Smoothie Bowl
½ frozen or fresh banana
1/2 cup of frozen raspberries
1 cup frozen blackberries/strawberries
1/4 cup soy beverage
1/2 tsp grated fresh ginger
3/4 scoop vanilla protein powder
1 tsp fresh lemon juice
1 tsp of coconut oil
¼ cup oats
2 tbsp unsweetened coconut
Blend all ingredients except the oats and coconut in a food processor or high speed blender until smooth.
Toast the oats over medium-low heat until they start to become golden-brown, then add the coconut and toast 1 to 2 more minutes until golden or browned.
Pour the smoothie into a bowl and top with the oats and coconut. Eat like ice cream!
