Best Guacamole

INGREDIENTS

1⁄4 cup chopped cilantro, divided
2 tbsp finely chopped white onion
1⁄2 tsp kosher salt
1⁄2 fresh serrano chile, stemmed and finely chopped
1 lb avocados (about 3 small), halved and pitted
2 tbsp fresh lime juice
Tortilla chips, for serving

INSTRUCTIONS

Mash half the cilantro, the onion, salt, and serrano into a paste in a mortar and pestle. Scoop out the flesh of the avocado and roughly chop; add to mortar along with remaining cilantro and lime juice and lightly mash. Serve with tortilla chips.

Variations:

For a creamier and stronger flavour, add 2 tbsp olive oil into the mix.

If you prefer to make the guacamole “lighter”, you can use 1/2 can of smoky baba ghanoush (canned eggplant) which is a perfect “diet” food with lots of fiber and low calories as well as having a similar texture to the guacamole.

 

If you prefer a lighter colour and flavour to your guac, use a small spoon of plain Greek yogurt or plain low fat yogurt to make the guacamole creamier and higher in protein.
