Chickpea Salad Sandwich

INGREDIENTS

1 can chickpeas, rinsed and drained

2 tbsp nutritional yeast

1 stalk celery, chopped fine

1/2 white onion, chopped fine

2 green onions, chopped

1 small pickle, chopped fine

1 sprig dill, chopped

1 garlic clove, minced

1/4 tsp ground nutmeg

3 tbsp vegan mayonnaise

2 tsp yellow mustard 

1 tbsp fresh squeezed lemon juice

INSTRUCTIONS
Serves 3.

Chop all ingredients noted above. Mix the mayonnaise with mustard, lemon juice, spices and dill. Stir in the chickpeas, and mash them slightly with your spoon. Mix in all the other ingredients.

Spoon 1/3 mixture onto whole wheat, whole grain sandwich bread. top with lettuce or spinach and your second slice of bread. Enjoy!
