Honey-Lime Quinoa Fruit Salad with Fresh Mint

INGREDIENTS

1/4 cup of cooked unsalted, unflavoured quinoa

1/3 cup of strawberries

1/3 cup mango sliced

1/2 cup blueberries

2 tbsp hemp seeds

1/2 cup coconut or plain 2% Greek yogurt

(use 1/4 cup light coconut milk if needing a dairy alternative)

1 tbsp of honey

2 tbsp lime juice

Optional chopped fresh mint
 

INSTRUCTIONS

Toss all ingredients together and enjoy!
