Open-Faced Egg and Arugula Sandwich with Dates and Goat Cheese

INGREDIENTS

1 egg

1 egg white or 2 tbsp liquid egg white

1 tsp olive oil

2 tbsp goat cheese

1 tbsp dates, soaked 10 minutes, , dried, and chopped finely

1/2 tsp honey

1 cup fresh arugula

1 slice rye bread, sprouted grain bread, or brown sourdough bread, toasted

INSTRUCTIONS

Fry the egg and egg white in olive oil in a saucepan over medium heat to desired doneness.

Mix together the goat cheese, honey and dates. Spread a thin layer on the toast.

Layer the arugula on top of the goat cheese spread and top with the fried egg. Sprinkle lightly with sea salt and cracked black pepper.
