Healthy Protein Waffle with Berry Sauce

INGREDIENTS

LACTO-OVO VERSION: makes 4 portions

1 1/3 cup rolled oats (instant will do, but I like to use whole rolled oats)
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 cup cottage cheese
2 eggs
1/2 cup water
2 teaspoons canola oil

1 tbsp pure maple syrup
2 teaspoons vanilla extract

1 tbsp cinnamon

VEGAN VERSION: makes 4 portions

1 1/2 cup rolled oats or 1 1/3 cup flour

1 tablespoon baking powder

1/4 cup unflavoured protein powder

2 tbsp pure maple syrup

1 1/2 to 1 2/3 cup water

1 tbsp canola oil

1 tbsp cinnamon

Optional: sprinkle 1 tbsp vegan chocolate chips on the waffles before you close the waffle maker

For chocolate waffles: Add 3 tbsp Fair Trade cocoa powder

INSTRUCTIONS

Blend the rolled oats and baking powder along with the cinnamon at high speed in a food processor or blender. Set aside in a separate bowl.

Blend the remaining wet ingredients in the food processor or blender. Pour in the dry ingredients and pulse until smooth and mixed.

Cook in a waffle iron according to its usual directions. I like them slightly golden brown so I put the vegan version waffles on the highest setting, and the lacto-ovo version on the step before the highest setting.

Top with honey, maple syrup, sugar free syrup, or berries. Other toppings might be refrigerated coconut cream, bananas, toasted coconut, slivered almonds, or nut butters. The version I photographed is topped with a homemade cherry compote made from tart cherries, corn starch and stevia.
