Creamy Seasoned Mashed Potatoes
6 white potatoes, quartered
3 tbsp "Better than Cream Cheese" Vegan substitute or regular low fat cream cheese
1 tsp vegan butter
Cracked black pepper and salt to taste
1/2 tsp smoked paprika mixed with 1/4 tsp seasoning salt for sprinkling
Bring the potatoes to a boil in plenty of water and simmer at medium heat for 15 to 20 minutes until easily pierced with a fork. Remove from heat, drain, and mash with a potato masher or fork or transfer to a food processor. While the potatoes are still hot, blend in the cream cheese substitute (or cream cheese), butter, black pepper and salt and puree until smooth. Plate and sprinkle with the seasoning salt and smoked paprika.
