Superpower Breakfast Oatmeal


1/3 cup whole rolled oats

2 egg whites or 1/2 cup liquid pasteurized egg whites OR 2 tbsp pumpkin seeds

1/2 cup grated zucchini

1/2 tsp vanilla

1/4 tsp cinnamon

1 small banana, sliced

2 tsp chia seeds

2 tsp nut butter (try almond butter!)

1/2 tbsp maple syrup

3/4 cup almond beverage

Other optional toppings: dried goji berries, cacao nibs, unsweetened coconut flakes, chopped dates, raisins, cranberries, pomegranate seeds, sunflower seeds, walnuts, pistachios...


Mix the oats, egg or pumpkin seeds, grated zucchini, vanilla and cinnamon in a cereal bowl. Pour in the almond beverage or other milk or milk substitute. Microwave 2 min for the egg-free version, For the egg version, microwave 3 minutes or cook on stovetop for 5 minutes until the egg whites become cooked.

Top with remaining ingredients. Enjoy your veggies for breakfast!
