Superpower Breakfast Oatmeal
INGREDIENTS
1/3 cup whole rolled oats
2 egg whites or 1/2 cup liquid pasteurized egg whites
1/2 cup grated zucchini
1/2 tsp vanilla
1/4 tsp cinnamon
1 small banana, sliced
2 tsp chia seeds
2 tsp nut butter (try almond butter!)
1/2 tbsp maple syrup
3/4 cup almond beverage
Other optional toppings: dried goji berries, cacao nibs, unsweetened coconut flakes, chopped dates, raisins, cranberries, pomegranate seeds, sunflower seeds, walnuts, pistachios...

INSTRUCTIONS
Mix the oats, egg, zucchini, vanilla and cinnamon in a cereal bowl. Pour in the almond beverage or other milk or milk substitute. Microwave 3 minutes or cook on stovetop for 5 minutes until the egg whites become cooked.
Top with remaining ingredients. Enjoy your veggies for breakfast!
