Winter Cranberry Kale Salad with Walnut Crumbles
INGREDIENTS
4 cups red Russian kale, chopped
1 Gala or Ambrosia apple, chopped finely
1/2 cup dried unsweetened cranberries or cherries

Cinnamon Balsamic Vinaigrette:
1/4 cup balsamic vinegar (optional to have flavoured)
2 tbsp olive oil
1 tsp maple syrup
1 tsp cinnamon
1/4 tsp allspice
​
Walnut Crumbles:
1/4 cup walnuts
2 tbsp hemp seeds
1 clove garlic
1/4 tsp salt
1 tsp olive oil
2 tsp nutritional yeast
Serves 4.

INSTRUCTIONS
Chop the kale and apple and toss together with the cranberries in a large salad bowl.
Whisk the dressing ingredients or shake in a jar until blended well.
Pulse the walnut crumble ingredients in a food processor or blender. Pour the dressing over the salad and top with walnut crumbles. Enjoy!
