Breakfast Bean Burrito with Avocado Slices and Cilantro

Serves 2.
INGREDIENTS

1 cup canned black beans, or pinto beans

1/4 red pepper, diced

1/4 sweet onion, diced

1 clove garlic, minced

1 tsp olive oil for cooking

1/4 tsp smoked paprika

1/4 tsp chili powder

1/4 tsp cumin

Optional: 2 chipotle peppers (from a can)

Black pepper and salt to taste

1/3 avocado, sliced

2 tbsp chopped fresh cilantro

Salsa, for serving

INSTRUCTIONS

Drain and rinse the beans, set aside. Fry the onion in olive oil until it begins to turn clear. Add the garlic, red pepper, and beans, and cook for 5 more minutes. Add the seasonings and mix.

Dish half the beans into a tortilla wrap. Add avocado slices, cilantro, and salsa. Wrap up in the tortilla and grill with a sandwich press/panini grill if desired!
