Mediterranean Lentil Soup
INGREDIENTS
2 tsp canola oil
1 onion, chopped
2 cloves garlic, minced
1 tsp cumin, 1/2 tsp chili pepper flakes
1 1/2 cups uncooked red lentils
6 cups low salt veggie broth
2 tbsp lemon juice
2 tbsp fresh parsley

INSTRUCTIONS
Fry onion, garlic, and pepper flakes in oil, and cook for 5 min. Add cumin and lentils, stir, then add broth and bring to boil. Simmer covered for 30 minutes until lentils are tender. Add lemon + parsley. Serve with a side of roasted root veggies or savoury potatoes!
